Damascus Steel is a way of combining soft steel with hard steel to acquire the benefits of both. In the example of the Ultra Chief knives the softer steel is in the outer laminations and they give strength and flexibility to the blade and the center core of VG-10 which is much harder (Rockwell 60-62) takes and holds an ultra sharp edge which stays sharp much longer than softer steels.
